Chicken Frittata |
Ingredients: 1 oz light unsalted stick margarine , 2 tablespoons 1 cup cooked chicken breast, diced 1 tbsp fat free half and half 1 1/2 cup liquid egg substitute 1/4 tsp salt 1/2 cup salsa Directions: 1 Heat margarine in an oven proof 10 inch skillet. Spoon chicken over bottom. 2 Combine half & half, egg substitute, salt and 3 tablespoons water and pour over chicken. Spoon salsa over top. 3 Cook over low heat 6 to 8 minutes or until almost set. 4 Broil about 6 inches from heat, 2 to 3 minutes, or until set. 5 Invert onto a plate, slice and serve.
