1 package frozen chopped spinach - (10 oz) defrosted
2 tablespoon red wine vinegar
3 garlic cloves minced
1 tablespoon minced fresh mint
1 cup low-fat sour cream or non-fat yogurt excess liquid
Drain excess water from the spinach by placing it in a sieve and using the
back of a spoon to press out all the water.
Combine the remaining ingredients in a small bowl. Mix well. Add the
spinach and mix well. Serve with an assortment of raw or lightly cooked
vegetables, whole-grain crackers, breadsticks, or pita wedges.
